Freshly baked cupcakes

I baked and baked the whole of Saturday. It will be my late mum's tahlil cum kenduri in JB today and she loved my orange cupcakes and chocolate cake. I used to make her a batch whenever we visited and she used to eat it all in one sitting. I miss you mum.

For those interested in this no-fail confirmed boleh jadik recipe, here it is:

Orange Cupcakes (15 mins prep time, 30 mins baking time)

Preheat oven to 175 degrees celcius

Ingredients ( makes 35 mini cupcakes)

225gm unsalted butter

160gm fine sugar

225gm self raising flour (sifted)

1 teaspoon baking powder (sifted into flour)

4 eggs

Zest from 1 orange

Juice from 1 orange

4 tablespoons fresh milk

1 teaspoon vanilla essence

Cream butter and sugar till pale. Add eggs and whisk till well mixed. Add vanilla essence. Fold in flour. Add juice and fresh milk and fold till no traces of flour can be seen. Add orange zest.Pour till 2/3 full in small papercups. Sprinkle cereals or cherries and bake for 30 minutes.

You can also add raisins or chocolate chips into the mixture.
